Belizean Christmas 101: How To Make White + Black Fruitcake

Yields 4 loaves.



1 lb butter
1 1/4 lb. white sugar
9 eggs
1 1/2 lb. flour
1/2 cup evaporated milk
3 tsp. baking powder
2 tsp. vanilla extract
1 tbsp. rum
2 tsp.lemon essence (or mixed essence)
1 lb. each: raisins, pecans, citron, maraschino cherries, and mixed peel. 1 egg and flour for fruit


Large standing mixer, or hand mixer with large mixing bowl
1 c. dry measuring cup
1 tbsp.
1 tsp.
4 loaf pans
1 roll of wax paper


โ€ข Cream butter with sugar; add eggs one at a time.
โ€ข Add flour and baking powder alternatively with evaporated milk, rum and essence.
โ€ข Mix fruit in a separate dish with egg and flour then add to the batter.
โ€ข Line pans with wax paper and fill 3/4 full.
โ€ข Bake in very slow oven at 275 degrees F for about 3 hours.
